There’s no reason to miss out on cocktail hour even though you’re staying home. We’ve found a cocktail recipe suitable for all home mixologists (even first timers). What’s more, it’s just what you need on a hot summer evening: light, cooling and fruity. Oh, and it’s a little bit indulgent, too, which is just as it should be for a cocktail, we say.
You don’t need a host of bottles to create it, and there are just a few ingredients to shop for. It’ll take minutes to make cocktails for two, and then you can be out in the garden sipping as the sun goes down.

Baileys Raspberry Ripple Cooler
Mixing up Baileys raspberry ripple cooler? You will need:
- 100ml Baileys Original Irish Cream
- 80ml coconut milk
- 500ml tub vanilla ice cream
- Small bottle raspberry purée, or a tin of raspberries in syrup
- Handful of fresh raspberries
Method:
1. Blend the Baileys Original Irish Cream with the coconut milk and a handful of ice. The mixture should be light and foamy.
2. Add a generous spoonful of raspberry purée or tinned raspberries to the bottom of two stemless wine glasses or tumblers.
3. Top with two or three scoops of ice cream.
4. Drizzle the ice cream with a generous spoonful of raspberry syrup.
5. Pour the Baileys and coconut milk mixture over the ice cream. It should reach to just below the top.
6. Drizzle with some more raspberry syrup.
7. To serve, top with fresh raspberries.
